Yeast cell wall preparations devoid of protein substances are commercially available as a dietary supplement. They are often used to bind ochratoxin A (OTA). OTA-producing black aspergilli is an opportunistic fungi that develops particularly on ripening berries. Recognised by the OIV, yeast cell wall preparations are permitted for use in grape wine in over 40 countries worldwide.
